This started happening with 5.8.0. I was to update our project with Docker image from 5.7.1 to 5.8.0

I have tested and it looks like it only happen if cdr_extra fields are bigger > 255 char.
Have you tried with 5.8.0 release (tag) or with latest 5.8 branch? There were some fixes since the release of 5.8.0 and it is better to test with latest 5.8 branch to be sure this is not a side effect of a bug that was already fixed.
I have created Dockerfile using https://github.com/kamailio/kamailio-docker
I just compiled from master and it works fine (while, compiled form 5.8.0 release tag had same issue).
