There are multiple ways, most commercial software duplicate a port in a switch and process
a copy of all the RTP data (provided there's a central point where you can get this).

you recommend a way to view the MOS score – possible hardware tap on network to get MOS?
Never worked with such thing, maybe someone else can help.
