Hi Daniel,
as Olle said, our wiki provides plenty of informations. Take a look to the sextion "External documentation" there, at the end there are two presentations from some admin courses linked. There is also a book about OpenSER, which can be useful to get an introduction.
If you just want to setup a simple loadbalancer, take a look at the dispatcher or carrierroute module.
