apart from SIP protocol theory, you can find an (obviously from another age) outlook of the entire voip ecosystem in VoIP Deployment For Dummies by  Stephen P. Olejniczak

You can find it used on Amazon, or maybe the pdf is floating in the intertube

Pay attention is "VoIP *deployment*", not just "VoIP"
