If I send a Subscribe with event=presence.winfo, SER answers with "Unsupported document format". In my config file, I have the line "watcherinfo_notify", 1. Where is the problem? I can't find an error in my Subscribe message.

You can not use Accept: application/pidf+xml with presence.winfo. Look into RFC 3857.
